You're buying a 7700k but not a motherboard that allows overclocking.
Either go for the 7700 or Z270 series motherboard (more expensive) if you want the full potential of 7700k.

I also think that RX 580 may be a better pick over the 1060 as it has similar to better performance for a lower price.

Also, if you're pure gaming then 7700k is the best, but if you wanna do any multi threaded app do consider Ryzen 5 1600. It allows you to upgrade your GPU while also allowing you to have better minimum frame rates because of the extra 2 cores 4 threads. You can overclock it to 4ghz using the STOCK AMD cooler which allows u to save the money for the 1070.

The build I have is still 800 dollars. Slightly worse CPU performance in terms of clock speed but more cores, and a way better GPU.

i5 vs i7 gaming performance difference is negligible.
You only need an i7 if you are getting a GPU that is going to max it out (1070 or higher might do that on an i5).

With the GTX 1060, grab either an AMD Ryzen 5 or Intel i5 7600k (use savings to buy an OC motherboard and better CPU cooler).

the board is only a temp until i save with my job same goes with the GPU this is just a temp fix and i might even go for a 1080 later in the year (maybe even a 1080 ti) I also mostly game so the 7700k should be just fine however i do browse the web from time to time (Youtube, etc) but it shouldn't be a issue, Also when i do get a 1070 or 1080 (ti) i could also save my brother some money because he a has a 1050 (smh)
